Potato Salad that’s creamy, delicious and nutritious

Potato salad is the classic summer BBQ side dish, and in this recipe, we offer a nutritious, “cultured” update with Kefir.

Kefir is cultured Dairy drink made with live Kefir cultures, and it originated in the Caucasus Mountains over 2,000 years ago. Biotiful Kefir follows the original ancient fermentation method, so it’s naturally packed with protein and contains billions of gut friendly bacteria which offer numerous health benefits, including gut health and immune health.

Kefir has a creamy, light texture with a refreshing tanginess, which helps this potato salad stand out.

  • 1 large egg
  • 350g fingerling potatoes
  • 3 tbsp Biotiful Kefir Original
  • 1 1/2 tsp mustard
  • 1/3 cup chopped celery
  • 3 tbsp chopped red onion
  • 1/4 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • Hard-boil the egg.
  • Cut the potatoes in 1-inch pieces and cook for five minutes until tender. Then leave potatoes to cool.
  • Combine the remaining ingredients in a bowl, adding the cooled potatoes last.
  • Peel and coarsely chop the egg before adding it to the potato mixture.
