A healthier alternative to traditional lemon cheesecake

This take on cheesecake is high in protein, low in fat and gluten free

Small bites are great for sharing at parties and also as a pick-me-up when you fancy a little treat.

These lemon cheesecake balls are certain to be a party hit, packing some major flavour – not to mention health credentials, too.

Our recipe uses Kefir Cheese, which is naturally high in protein, low in fat, has no sugar added and is suitable for vegetarians, too. Making this dessert one you’ll make time and again.

Not to mention it contains only 5 ingredients and is no-bake. How great is that?

Once you’ve tried the lemon version, you could always try making your own variation. How delicious does a blueberry cheesecake ball or cacao cheesecake ball sound?

Time to make some cheesecake…

Ingredients:

  • 150g Kefir Cheese Original
  • 2 tablespoons honey
  • Half lemon (zest and juice)
  • 1 cup (100g) desiccated coconut
  • ½ cup (50g) desiccated coconut for rolling

Makes 23 cheesecake balls.

  • Put the Kefir Cheese Original, honey, lemon zest and juice and 1 cup (100g) desiccated coconut into a bowl and stir well.
  • Put ½ cup (50g) desiccated coconut onto a plate.
  • With slightly wet hands, scoop ½ tablespoon of the mixture and roll into mini balls.
  • Then coat these balls with the extra coconut on the plate by rolling them.
  • Chill in the fridge for 30 minutes before serving.
