Tzatziki

Kefir + Protein Original

Cucumber

Fresh Mint

Garlic Infused Oil / EVOO & Garlic Puree

Water

Gyros Flatbread

Gluten Free Self Raising Flour

Gram Flour

Yogurt

Water

Fillings: I used Tiba Tempeh marinated in a Greek spice mix, rocket and radish
In a bowl mix 80g Self Raising Gluten Free Flour and 20g gram flour with 20g yogurt and 30ml warm water. Once combined add more water until you get a thick pancake batter like consistency. Set Aside.
Mix together spice mix of choice with oil and water, marinade tempeh and set aside
In a bowl mix together Kefir + Protein, diced cucumber, finely chopped mint and a dash of garlic oil to create a fermented twist on a classic tzatziki. Add water to get the desired consistency, if using a more liquid kefir like the Biotiful original, you won’t need to add water
Add a drizzle of oil to a frying pan and gently fry the Tiba Tempeh for 5 minutes on each side.
In a griddle pan, add a drizzle of oil, once hot add the flatbread mix spreading to the edges, flip after 2 minutes or once browned.
Fill your Gyros and add a generous heap of fermented tzatziki that your gut will love, roll up and enjoy!
