Our Kefir Chia Pudding with Fresh Berry Compote is an office favourite. Whether you’re after an easy breakfast idea, afternoon treat, post-gym snack or an after-dinner dessert, this versatile pudding is sure to satisfy. It’s simple to make, delicious to eat, and with the Kefir it’s high in protein and contains billions of gut-friendly cultures, too. And with the bright colours, it also makes a great talking point for house guests whether you serve at breakfast time or at a dinner party.
Toppings: goji berries, seeds and fresh raspberries
350g of any mixed berries; we used 200 grams of raspberries + 150 grams of chopped plum
1/4 tsp cinnamon
3 tbsp orange juice
1 tsp chia seeds
When using Kefir in your recipe, it’s best to follow a 3 tbsp chia seeds : 250ml of Kefir ratio to reach a foolproof consistency every time.
In a large bowl, combine the chia seeds and flax seeds.
Pour the Kefir over the seeds and mix well.
Cover and refrigerate overnight
Remove from fridge in the morning and give it a good stir. Serve with your favourite toppings and fresh compote.
For the compote: In a medium saucepan, combine your fruit of choice, cinnamon and orange juice. Bring the mixture to a boil and stir occasionally. Leave to simmer for five minutes. Set aside and add chia seeds.
