Kefir Chia Pudding with Red Berry Compote

When using Kefir in your recipe, it’s best to follow a 3 tbsp chia seeds : 250ml of Kefir ratio to reach a foolproof consistency every time.

  1. In a large bowl, combine the chia seeds and flax seeds.
  2. Pour the Kefir over the seeds and mix well.
  3. Cover and refrigerate overnight
  4. Remove from fridge in the morning and give it a good stir. Serve with your favourite toppings and fresh compote.
  5. For the compote: In a medium saucepan, combine your fruit of choice, cinnamon and orange juice. Bring the mixture to a boil and stir occasionally. Leave to simmer for five minutes. Set aside and add chia seeds.
