Pancakes

1/2 cup spelt flour

1 tbsp. ground almonds

1 heaped tbsp. coconut flour

1/2 tsp. baking powder

1 tsp cinnamon

A pinch of salt

1 flax egg

100ml of almond milk

Topping

Biotiful Kefir + Protein

Mixed seasonal berries

Sprinkle of cinnamon

Add the flax egg into a bowl and sieve in the dry ingredients, mix to form a thick batter.

Gradually add in the milk

Keep mixing until no lumps remain

Heat a small amount of olive oil or coconut oil in a large frying pan

Spoon 1 heaped tablespoon of the batter into the pan

Cook for 3 minutes (until you notice bubbles beginning to form on the top) flip over and cook for a further minute  or 2 on the other side.

Plate up the pancake stack and top with a big dollop of @biotiful kefir, mixed berries and a sprinkle of cinnamon
