Makes 6 medium sized fritters. Vegetarian & Gluten Free!

350g sweetcorn

2 large eggs, beaten

75g gluten free flour

½ teaspoon ground cumin

½ teaspoon ground coriander

½ teaspoon smoked paprika

¼ teaspoon chilli flakes

½ teaspoon salt

Zest of 2 limes (cut these limes into wedges afterwards for serving)

Vegetable oil for frying

To Serve:

Mix together ½ pot of Biotiful Kefir & Protein (Original) with 1 teaspoon rose harissa paste and add kosher salt to taste

Handful of rocket leaves

Halloumi, thick cut slices, pan fried

Lime wedges

In a bowl mix together the sweetcorn with beaten eggs, cumin, coriander, smoked paprika, chilli flakes, lime zest and salt. Then sift in the flour and mix all together.

To shallow fry the fritters, put enough oil into the frying pan to cover the surface, place on medium-high heat. Once hot, use 2 heaped tablespoons of mixture to form each fritter in the pan so they are around 1.5-2cm thick. Fry for 2-3 minutes each side, until light golden brown and crispy. 

Once fried remove from the pan and place onto some kitchen roll to drain off the excess oil and keep warm in a low oven whilst frying the remaining fritters.

To serve, top with pan fried chunky slices of halloumi, rocket and a generous serving of the harissa kefir dip. Enjoy!
