High-protein pancakes made with Kefir Cheese

Our take on traditional syrniki

These high-protein pancakes are our own take on syrniki, a type of quark pancake that’s popular in Russia, where Biotiful founder Natasha is from. Syrniki are typically made with farmer’s cheese, and in our version we use Biotiful Kefir Cheese Original.

Great for weekend brunches with the family and easy for kids to get involved, these pancakes are sure to be a popular treat.

We’ve served ours with blueberry compote, fresh berries and an extra portion of Kefir Cheese Original.

  • 1 pot Kefir Cheese Original
  • 1 egg
  • 1 tablespoon agave
  • ½ cup (64g) flour + ⅓ (43g) cup flour divided
  • 2 tablespoons extra light olive oil for frying


  • In a large bowl, combine the Kefir Cheese Original, egg, agave and ½ cup (64g) flour until mixed well.
  • Put the remaining ⅓ cup (43g) flour in a small bowl and set it aside.
  • Heat oil in a skillet over medium low heat.
  • Place a tablespoon of the batter into the extra flour and sprinkle flour over it, gently transferring it from one hand to another to remove excessive flour.
  • Immediately, place it into the hot skillet.
  • Cook in batches until golden, about 1 minute each side, and place on kitchen roll to cool.
  • Repeat the same for other patties.
  • Serve with fresh berries or a berry compote.

Compote (optional)

Optionally, you can prepare an easy blueberry compote by combining a handful of blueberries, 1 tablespoon agave and 1 tablespoon water in a small saucepan. Cook over medium-low heat until it begins to bubble. Reduce the heat and simmer until thickens slightly. Let it cool completely.
