The Kefir in this potato salad not only adds a divine creaminess but also boosts its nutritional value. It will make a great addition to any BBQ.

You’ll need:

  • 1 large egg
  • 350g fingerling potatoes
  • 3 tbsp Kefir
  • 1 1/2 tsp mustard
  • 1/3 cup chopped celery
  • 3 tbsp chopped red onion
  • 1/4 tsp kosher salt
  • 1/4 tsp freshly ground black pepper

Firstly hard-boil your egg. Then cut the potatoes in 1-inch pieces and cook for five minutes until tender. Combine all of the remaining ingredients in a bowl, adding the potatoes at the end. Finally peel and coarsely chop the egg; adding it to the potato mixture.
