Like guacamole, this dip is great with crisps, vegetables and as a side dish. But what makes it really stand out from guacamole is the creamy and naturally tangy Kefir combined with the sweet, nutty richness of the cashews. Which, by the way, are actually seeds! That’s right: cashews aren’t technically nuts, even though they generally get treated like nuts in the kitchen.

In a food processor, blend the cashew nuts until finely crushed. Scoop out the contents of the avocados and add into the food processor. Add lemon juice, the olive oil and chilli. Blend until creamy. Flavour with salt and pepper & decorate with a few parsley leaves.
