Tempt your taste buds with this spicy tandoori chicken recipe, served with a cooling Kefir dip. A perfect addition to any summer BBQ!

For the chicken

  • 1.75kg chicken drumsticks
  • 500ml Kefir
  • The juice of 2 lemons
  • 3-4 tbsp tandoori spice mix
  • Pinch of salt

For the dip

  • 3-4 tbsp Kefir
  • 5 fresh mint sprigs
  • 1 green chilli, deseeded, sliced
  • Pinch of salt and sugar

Firstly cut deep incisions into the chicken with a small, sharp knife. Then place the chicken into a bowl and sprinkle over the salt and the juice of two lemons, massaging into the chicken until well coated. Whisk the Kefir and tandoori spice mix in a bowl until well combined and then pour the marinade onto the chicken and massage into the flesh. Cover with cling film and chill in the fridge overnight.

The next day simply grill or BBQ your drumsticks for 20 minutes, turning regularly. Add more lemon juice to taste.

For the dip, place all of the ingredients into a food processor and blend until smooth. Serve alongside the chicken drumsticks. Delicious and packed with protein!
