Easy lunchbox recipe for an avocado sandwich

Need an easy lunchbox idea? You’re in luck, because this sandwich is delicious and good for you, too.

Made with fresh avocado, sourdough bread and delicious Kefir Cheese, it’s gut-friendly and sure to satisfy.

Avocados are packed with potassium, loaded with heart-healthy vitamin B6 and potassium and a good source of fibre. We like to think of this sandwich as the lunchtime alternative to avocado on toast.

  • 1 ripe avocado, mashed well
  • 1 teaspoon lemon juice
  • A pinch of salt
  • 4 slices sourdough bread
  • 150g Kefir Cheese Red Pepper & Cumin
  • Small handful of watercress
  • 1/2 cup (75g) cucumber, thinly sliced

  • Mix mashed avocado, lemon juice and salt well.
  • Spread Kefir Cheese Red Pepper & Cumin on one slice of bread.
  • Layer on the rest of the ingredients.
  • Close the sandwich with the other slices and serve.
