This quiche is a great way to enjoy kefir as part of a main meal. It is delicious served with a side salad and perhaps a baked sweet potato.

Ingredients: 3 eggs, 100g plain flour (some for the tin), 500ml kefir, pinch smoked paprika, salt, pepper, butter or oil for the tin, about 100-120g of toppings (I used a small onion and 50g chorizo (pan-fried until nice and golden), a couple of handfuls of spinach (pan-fried also) and a spoonful of roasted pine nuts).

  1. Pre-heat the oven to 200°C (gas mark 7)
  2. Butter and flour your tin (ideally a small square roasting tray)
  3. Prep and pan-fry your toppings, then leave to the side to cool down
  4. In a big bowl, whisk together the egg and flour, then add the kefir and whisk until the batter is smooth. Add the toppings in and mix carefully
  5. Pour the batter in the tin, then bake for 35-45 min or until the top is golden. Serve immediately or eat within the next couple of days
