Looking for new ways to enjoy Kefir or Riazhenka? Then why not try these tasty cupcakes! We used Riazhenka as it creates a creamier and slightly more luxurious texture.


  • 1 cup of Kefir or Riazhenka 
  • 3 eggs
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 1 1/2 cups flour
  • 1 tbsp baking powder
  • Raspberries & icing sugar (for decorating)


First heat the oven to 350 degrees (180C) and grease an 8 inch (20cm) cake pan. Then lightly beat the eggs with a hand mixer, slowly adding the oil, sugar and Kefir or Riazhenka and beat until smooth. Finally add the flour and baking powder and continue to beat until well combined. Pour the mixture into the cake pan and bake for 35-40 minutes. When cool, mix together the icing sugar, raspberries and Kefir and drizzle over the cakes.
