We absolutely love this simple energy ball recipe. Accompanied with a cold glass of kefir, it makes for the perfect afternoon pick-me-up.

Makes about 10 energy balls:

  • 1/2 mug almonds
  • 1 mug pitted Medjool dates
  • 1 tbsp chia seeds
  • 2 tbps raw cacao powder
  • 1 tbsp almond butter
  • 1 tsp coconut oil
  • A tsp honey or maca powder (optional)
  • A handful of desiccated coconut

Firstly crush the almonds in a food processor. Then add all of the other ingredients (except for the desiccated coconut) and 1 tablespoon of water. Blend until everything has mixed together and the consistency is smooth and sticky. Then simply roll into balls and cover in a layer of desiccated coconut.

Place the balls in the freezer for about an hour to set and then store in an airtight container in the fridge.
